Thai Salmon Salad


Serving: 2

Measuring: Table Spoon

Ingredients

Salmon Fillet As big as you like :)

Fresh Chilli 1.5 (depend on how hot you like)

Garlic about 1.5 (If you don’t like put a bit as this will give you great flavour)

Coriander 1-1.5

Mints 0.5

Spring onion 1-1.5

Lemongrass 1.-1.5

Red onion 1-1.5

Lime or Lemon Juice 2.5- 3.5

Fish Sauce 2.5

Sugar 0.5 - 1

Mixed salad or Lettuce

Tomato cherry

Olive oil


METHODS

Prepare all the herbs and garnishing

1. Chop garlic, chilli, red onion, spring onion and mints (Leave top for garnish if have). See Pics



2. Very fine Chop lemongrass and spring onion especially lemongrass as it might stuck in your throat while eating. See Pics

3. Cut half cherry tomatoes and fine chop lettuce. See Pic

4. Heated up stove as high put pan on leave for 30 second put olive oil in then slow heat to medium to high.

5. Before put Salmon in make sure pan quiet hot otherwise fish will Stick to the pan then Put skin side of the salmon in first See Pic

6. Leave it quite awhile when skin cooked it will smoke and smell a bit. Then slowly turn upside down and down heat to medium if its a big fillet use bowl cover to make it cook faster.See Pics

7. Put fish sauce lime juice and Sugar in mix until sugar dissolve. Taste should be lead with sour and salty with hints of sweet but my idea make it as how you like.

For me I love sour so I put more lime juice indeed to make it fresher. Then put garlic, chilli a bit coriander in and spring onion mixed them well. By the time we preparing for dressing pls look at fish regularly.

8. Taste it now taste should be full flavoured hot sour salty and bit sweet. Then We put it around plate (just for garnish leave some for topping) put down half cut tomatoes cherry in, put lettuce in the middle. Make it look Fabulous...I know you can do it :)

9. Then put Mint, lemongrass, spring and red onion in the rest of dressing mix them well. The Salmon should be cooked by now so slowly bring them out from pan and put on top of Lettuce, don’t forget to turn off the stove , you might be burnt ;p.

10 throw the rest of Topping on top of the salmon then garnish with Mint ( If you still have it ;p ).And TADAAAA it's how it looks like

Tip: If you have roasted peanuts put them in as it goes along very well with this dish.
